The first time i made this dish i was severely suspicious of the no cooking aspect. However, i am pleased to say it was utterly gorgeous and well worth the 'risk'! Since making it i have recommended it to a few friends and i've had excellent feedback.
Ingredients:
1 courgette
Potato peeler (You'll find out why!)
1 tbsp olive oil
2 tbsp lemon juice
Peel the courgette into ribbons using the potato peeler. You can make it a bit more aesthetic, if you wish, by leaving a strip of colour on either side of each ribbon! Try not to get any pips in the ribbons, so once you reach the pippy centre, stop!
Whisk together the lemon juice and olive oil and drizzle over the courgette ribbons. Leave to marinate for 15 minutes and you are done.
This is mine below. I used yellow courgette and i put a bit of black pepper over the top!

Scrambled eggs with Sage
A pretty breakfast for yourself or an impressive breakfast for the other half. Scrambled eggs need never be scruffy again...and all because of a teeny little herb.
This literally takes 2mins 30seconds. I timed it this morning!
Ingredients: Serves 1
2 Large eggs
50ml Milk
2 tbsp Very cold milk
1 tsp Sage
Black pepper
Large, thick slice of great bread
Flora, for toast
Cherry tomatoes, still on the vine
Olive oil
Handful of Spinach leaves / Favourite lettuce
A timer!

- Stand the tomatoes, unchopped, on the vine, in a bit of olive oil, on medium heat. (They can be left to cook)
- Put bread in the toaster/under the grill.
- Put the eggs and 50ml of milk in the saucepan on high heat, stir constantly! NB: Keep yolks whole!
- 30 seconds in: Pop the yolks and stir in.
- 1 minute in: Add the pepper and sage and continue stirring. Once all stirred, remove from heat and continue stirring (The egg will continue cooking)
- Butter the toast and remove tomatoes from pan and put on plate, add the spinach and/or lettuce.
- Put the 2 tbsp of cold milk in the scrambled egg (This stops it cooking more!)
- Serve!

Don't be afraid of your kitchen, love it and it'll love you back!
Fast food, takeaways, read meals. I know it's convenient, i know it's easy and i know it's never scary but cooking isn't hard, it doesn't have to be expensive and there's something so ultimately satisfying about creating a beautiful, fulfilling and fabulously nourishing dish.
The sound of piercing through film and slicing through plastic grates like nails on a chalk board. The nation's love of food is dimming due to nuked cheese and torrents of mustard or mayonnaise! Wouldn't you rather trade it in for soft, creamy scrambled eggs with a hint of herbs with crunchy, fresh bread with some sauteed tomatoes? (At risk of sounding M&S like) That's not just breakfast, that's a real, wholesome, gorgeous, taste filled breakfast!
Every couple of days i will be updating my blog with recipes, hints and tricks. I won't just stop with breakfast! Lunch, dinner, snacks and deserts are all inclusive and everything will be tried and tested! I hope it'll inspire some shy cooks to come out of McDonalds and into the wonders of your own kitchen.
